RECIPE:
Apple and Celeriac Soup:
Ingredients
2 shallots, finely chopped
1 clove smoked garlic, finely chopped
2tbsps olive oil
1 small celeriac, peeled and cubed
2 apples, peeled and cubed
approx 1 litre of chicken or vegetable stock (enough to cover apple & celeriac mixture)
a small bunch of thyme, tied together with string
salt & pepper, to taste
Method
1/ Heat the olive oil over a medium heat in a large saucepan. Fry the onion and garlic, until soft and translucent, being careful not to burn them.
2/ Place the celeriac & apple cubes in a food processor, processing until in small pieces. Add to onions & garlic in saucepan, and add sufficient stock to cover.
3/ Add the bunch of thyme to the saucepan.
4/ Bring to the boil and simmer for 25-30 minutes, until vegetables are soft.
5/ Remove the thyme bundle. The, blitz the soup with a hand blender until a smooth & velvety soup is formed. Season to taste with salt and pepper.
