When you're learning to tattoo, getting into color is a whole different ballgame. That's why I always have my own apprentices start with black and gray. Getting those fundamentals down first not only helps them learn faster (which means they can start on human skin sooner), it also builds the solid foundation you need to start doing color tattoos correctly in the future.
If you're sort of in the middle where you're comfortable doing black and gray tattoos but color saturation and blending is causing you trouble - I'd highly recommend working with an opaque gray set. That way, you can begin building the fundamentals of color without having to also focus on color theory yet.
